Now that sounds really funny since we live in Houston, Texas but I must say this has been the coldest winter I have ever experienced here. So I wanted to bring something yummy to eat and something filling. So I thought about Mac and Cheese. I am not a mac and cheese kind of gal so I wanted something other than that yellow goo on macaroni. So I found this great recipe with one of my favorite cheeses in it and I will use it again!
GRUYERE MAC 'N CHEESE6 tablespoons butter
5 1/2 cups milk
1/2 cup flour
2 teaspoons salt
1/2 teaspoon nutmeg
1/4 teaspoon pepper
1/4 cayenne pepper
1 tablespoon dijon mustard
4 1/2 cups white sharp cheddar cheese, grated
2 cups gruyere cheese, grated
1 pound elbow macaroni
Heat the milk in a medium sauce pan, melt the butter and then add flour. Cook, whisking about 1 minute.
While whisking, slowly pour in the hot milk. Continue whisking and cooking constantly until it becomes thick and bubbles.
Remove the pan from the heat and stir in salt, nutmeg, black pepper, cayenne pepper, dijon mustard, cheddar cheese and gruyere.
Cook the macaroni, rinse in cold water and then stir in to cheese sauce.
Pour in to a greased dish.
Bake until brown on top about 30 minutes at 375 degrees.
If you like things a bit spicy add a can of chopped green chilies.
