Yummy Healthy Pasta Dish

Let me first say I LOVE pasta. All kinds of pasta and sauce will do for me. Especially if there is shrimp and garlic involved! Now I don't usually post recipes I leave that to http://agirlinthesouth.blogspot.com she is a fantastic cook, yes she is my daughter but she still is a great cook. I use to cook a lot and make all sorts of things using new recipes to try out on the family. Then the kids grew up and it was just me and my husband. So now I stick to quick, easy and fast as we are always on the go. So with that being said, when I saw this recipe I had to try it and I am so glad I did.

Garlic Shrimp Linguine
1 pound linguine
1 tablespoon butter
3 tablespoon white wine
2 teaspoon parmesan cheese
3 gloves of garlic
1 teaspoon chopped parsley
salt and pepper to taste
1 pound medium shrimp peeled

  1. Bring a large pot of lightly salted water to a boil . Add pasta and cook for 8 to 10 minutes, then drain.
  2. In a medium sauce pan melt butter over medium low heat, add wine, cheese and garlic, parsley, salt and pepper. Simmer over low heat 3 to 5 minutes stirring frequently.
  3. Increase heat to medium high , add the shrimp to skillet. Cook for about 3 to 4 minutes or until the shrimp turns pink.
  4. Divide pasta into portions and spoon sauce on top; garnish with parmesan cheese and fresh parsley.
When I decided to make this dish I didn't have any linguine in the house all I had was rigatoni's so I used that. After making the sauce I could tell it would be very little on each portion so I tripled the sauce portion and it was perfect. Especially with using a heavier type of pasta.
